Not so Plain Jane after all

We have had quite a few customers ask us to create a vanilla cake pop since we 'opened shop'. And, after about 20 different recipes....we have a winner! In all honesty, I am not a vanilla girl. I am a chocolate addict. Erika, on the other hand, loves vanilla so we wanted to create a pop that was pure and true to the vanilla flavour. I find that a lot of vanilla cupcakes are dry and "cardboardy"- that's probably why I am not crazy about the flavour as a whole. BUT this one is delicious! Made with real vanilla beans in the cake and frosting, it is pretty divine.

A little trick of the trade to improve all your vanilla baking endeavours? DO NOT over bake a vanilla cake or cupcake. You can get away with a little over baking for other flavours but vanilla is very finicky. Also, always lower your oven 25 degrees as it will make your cake or cupcake moister.
